Ok, I'm biased, but competition white - the one with the red stripe - my bike - my favourite!
I thought I'd update everyone here, in case anyone's in my shoes that are now a month old 
I bought an FZ6N and have completed the mods in my signature list so far. The pipes are about 2 weeks away, otherwise I'm very content with the acquisition. My original question of torque? Well yesterday I rode the shop demo S model home and back (90km) and had to laugh the entire ride. Why? Because it's so different to what mine is now, and I've only spent the good side of maybe $300 on it thus far!
I think the -1 front sprocket is a mandatory, and is my "if you could only do 1 mod" pick. The stock gearing certainly buzzes less cruising at 100km/hr, but the zip you sacrifice is quite significant.
The 2nd thing that's noticeably different is the riding position. FZ1 bars and lowered 1cm up front, the stock really feels like a touring bike in comparison. It really does affect how you corner on the bike, and is my #2 mod.
These two changes cost all of $100, and maybe 3 hours in the garage. I can't stress enough the value of them! If you're on the fence about the motor in the FZ, let me reassure you that its characteristics can easily be changed to your liking. And I haven't even put the pipes on yet
