My bike's temp range goes from170-ish to about 215-ish until the cooling fan cools it down nice and quick. I have seen the temp gauge go up after I've killed the engine but left the key on, not too sure why it does that, anyone else see that and can tell me why?

Because u r not moving and the fan has not kicked in.
