How much do these effect the width of the bike? I've always wanted some saddlebags but my only concern is regarding lane splitting. Are they any wider than the mirrors are?
I used a pair of stubby tools tire irons to get the tire off. They're made of a hard plastic and won't scuff your rim.

I use a timbuk2 messenger bag with a stabilizing strap which goes across your chest to stop the bag from swinging around. I love it, especially since the weight can be rested on the seat and its a lower center of gravity vs backpacks.
