A helmet wouldn't stop a bullet... if it hit at an angle, it MIGHT deflect it however. But I sure wouldn't be trading in a kevlar helmet for a motorcycle helmet, that's for sure.

I'm a big fan of hydration packs as well. Helps me to stay hydrated while riding through the Midwest summer heat. I sneak in a sip every now and then.
