"Proficient Motorcycling" is a must read for new riders, imo.

Another book I enjoyed (this one is less instructional, but more entertaining) is "Stayin Safe" by Lawrence Grawdsky.
 
I'm currently reading "The Riding Bible" by James R. Davis.

Very helpful, very informative. Lots of good tips.

Riding in the Zone by Ken Condon. A lot of useful info about different riding techniques, how to shift gear quickly, how to brake using an engine and so on. I was surprised that there are a lot info I don't know about riding.
