Speaking of Indian food, my wife and I just got back from an Indian Buffet. I love to dip the Naan in to the Chicken Tikka Masala Curry. Yuuuuummmmmy.

Well, how about a naan recipe then?

After a couple trips to India, I tried to reproduce some of the foods here from cookbooks, and found that they called for spices I don't have (or in some cases, even recognize), cooking techniques I was unfamiliar with, and equipment I didn't own.

After perusing my local Indian market I discovered boxed spice mixes, usually called masalas. These have all the exotic spices pre-ground with the recipe on the back, making it easy to recreate your favorite dishes. It's like hamburger helper - just add the contents of the little box to meat, and other basic foods you can find in an American grocery store like tomatoes, onions, garlic and ginger, and plain yogurt. The cooking techniques and equipment is commonly available and relatively easy to follow. I like the Shan brand spice mixes the best. My favorite of these is Rogan Josh, which is meat (beef, chicken, or traditionally lamb) in a spicy gravy. Even my 8yo son likes it. I've got some goat meat in my freezer, I'm going to try it with that next (meat market was out of lamb).

Now, you'll need the naans to dip in the gravy. Since you probably don't have a tandori (clay oven), we will use a conventional oven and a pizza stone to get a similar effect.

2c. flour
3/4c. water
2t oil
2.5 T plain yogurt
1t sugar
1t salt
1/8t baking powder
1 pkg or t. of yeast

Proof yeast in water with sugar. Mix dry ingredients, then add oil, yogurt, and yeast. I find that I generally need to add more flour to get the dough a little stiffer and not be a sticky mess.

Now, knead for a few minutes until you get a smooth, elastic dough. Wipe the inside of a bowl with oil, place dough inside, cover with plastic wrap, and let rise 3-4 hours until doubled in size.

Place your pizza stone in the oven, and preheat to 500. When it hits 500, switch to broiler. While it's heating up, punch down the dough and separate into 6 pieces. Roll each in flour, then roll out into an oblong shape.

Bake in batches of however many fit on your pizza stone, for just 3 minutes. The combination of the broiler and hot stone will brown both sides, and you'll see them puff right up. Brush with melted butter as they come out. Try a little garlic in the butter, too.

In a slow cooker (a.k.a. crock pot) place one Ham picmic shoulder and pour in two 12 oz Sam Adams Winter beer. Set for High for 4 hours and warm for 4 more. Serve with smashed taters and whole kernel corn lathered with butter.

Be sure to use real butter and whole cream when smashing the taters!
 
This is one of my favorite dishes - very easy to make and it is excellent reheated!

Spinach and Bacon Quiche

6 eggs - large, beaten
1 1/2 c. heavy cream
salt - to taste
pepper - to taste
2 c. spinach - fresh, baby, chopped
1 lb. bacon - cooked and crumbled
1 ready made pie crust - 9"
1 1/2 c. Swiss cheese - shredded

Combine eggs, cream, salt and pepper. Layer spinach, bacon and cheese in bottom of pie crust, then pour the egg mixture on top. Bake at 375 degrees for 35-45 minutes until egg mixture is set and top is golden brown.

Gosh - it is making me hungry just typing it! Enjoy! ;)
 
Hey whatever happened to the cheesecake recipe ;)

Hey Cloggy.....I know this was a long time ago, but I just made that cheesecake a few weeks ago (remembered the recipe) and thought I'd post.

World's easiest Cheesecake

8 oz. cream cheese
8 oz. cool whip
8 oz. sour cream
1/3 cup of sugar
1 tsp. vanilla
1 graham cracker crust
1 can of your favorite fruit (in sauce): strawberry, blueberry, cherry
Mix softened cream cheese, sugar and vanilla (til blended). Add sour cream. Then fold (meaning don't beat or mix with mixer) in cool whip, blend well. Pour mixture into graham cracker crust and chill in refrigerator overnight. Add fruit right before serving.

EDIT: Does anybody know how to make shrimp civiche (sp?)

Cerviche is seafood (or other meats) served "raw" where the "cooking" is done by the acids in a marinade, usually citrus.

The resulting dish is both safe and delicious.

Basically, you soak the shrimp in an acidic citrus mix...yummy, and not complicated.
 
Oh, NOM! Fixed this dish tonight, delicious, unusual, cheep, and quick: I could've invited "30-minute" Rachael Ray over and still had time for "dessert" :cheer:

Vietnamese Tilapia with Tumeric and Dill:
2 Tilapia fillets
6 scallions, cut into 2" pieces (slice white portions in half lengthwise)
1 package fresh Dill (about 1/2 cup chopped)
1/4 tsp ea. tumeric and ground ginger (I ground up some fresh ginger instead)
Salt, pecker and olive oil
2 limes
2 Tblspns fish sauce (nam pla)
2 Tblspns sugar
1 jalapeno

Heat olive oil over med-high. Sprinkle fish with tumeric, ginger, salt and pepper, and fry on both sides until flaky, about 4 minutes. Remove to a platter.
Toss scallion in the oil, cook about 45 seconds. Add dill, cook another 15 seconds. Pile the onion/dill mixture on the fish and serve with the sauce below:

Dipping Sauce: Combine the juice from the 2 limes, nam pla (if it smells absolutely rotten coming out of the bottle, don't worry, it is; it's supposed to be), sugar, and 1/2 tsp minced jalapeno, stir until sugar is dissolved (this stuff is excellent, would be great on any fish 'cept sushi!)
 
Lamb Chops on the Barby, tossed salad, and Beer.....the great Aussie summertime feed....quick, cooked outside, and goes well with BEER!

Exactly........problem is that would mean a trip to the Supermarket yourself.....cause if the missus saw them, she would never buy them!!!!
