Help a newbie out. What's the best way to keep the bike stopped and then get moving again after stopping on a hill.

Keep your foot on the rear brake until the clutch starts grabbing. Give some extra throttle just for a little insurance to keep it from stalling.
Other than avoiding intersections on hills or inclines, that's what I've been doing (most of the time with success) but yesterday I was behind a rider at a traffic light on a hill and he held the front brake with two fingers and then simultaneous throttle and clutch after the light changed.
Best place to practice, find an empty parking garage and practice on the ramps. The top of the garages tend to be the least crowded if you want to go now.
