im looking for a similar set up, i just got back form a 1000 mi + ride over a couple days and my knees and ass were killing me. I know a lot is the crappy stock seat, but I cant afford a saddlery right now, but the highway pegs would have helped alot. its nice to be able to move around a bit...
i had the yamaha touring screen on it when i bought it, but it also came with the stock screen, which I painted black. I use the stock screen around town, but just had to take an inpromtu 1000 mile trip. So I put the taller one back on because the weather around here is unpredictable at best...
i went ahead and drilled mine out...figured i would be getting new cans eventually anyway. Used a 7/8 hole saw with a 12 inch extension and a 14.4 volt cordless drill, took 5 minutes.
Its louder than stock, but not much... not tinny but it does have an odd tone. Still, at least it doesnt...
on my trip across the bighorns last fall, over the top then down onto the super slab, 45 mph corners to 90 mph freeway...52 mpg all the way. 2-up with some luggage.
As far as touring naked...did that for a long time on a cruiser. Its not bad once you get used to it.

I come from cruisers so I like to wear plugs while riding...people always told me to baffle the pipes, but I couldnt make them understand that at highway speeds ( and beyond...) you dont hear the pipes, but the wind is abnoxious...I have almost always worked where earplugs are required...naval...
my rule for my kids was reaching the rear pegs comfortably...they do make rigs that go around your waist, with hand holds and stirrups for their feet, but I feel that if you need that youre too young. Along with the gear, I dont see a problem with that and would probably gave the "lady" a :Flip:

Just got back from a 2-up trip over the mountains, bout 10,000 up or so...lots of twisties which are a blast on my old virago, kick in the ass on the FZ! tank bag gave us room for stuff, bike gave us an amazing way to get there!
kinda diggin the fz8, but I've always wanted an FJR! especially after the two day ride we just got back from...lots of mountain twisties and the fz did awesome, even two-up, but I sure would like the more dedicated tourer.
