I use my bike for all of the above, it's my only motorised form of transportation. Some days i drive slow, other days i drive fast, sometime i even drive the speeding limit.
What about enduro/adventure-bike riders ?

hmmm, those riders seem to go pretty fast.
Most people who come from countries that have to do an exam/class had this as part of their training and they go waaaaay slower (and less sloppy) then those guys in the video are going.
I'm 5 7 and i can't flatfoot as well, but i learned to deal with it because every other bike i will buy after this i won't be able to flatfoot either (the plan is to go bigger, not smaller after this one). Once you're used to it, it shouldn't be a problem.
i'm not really sure what happened, he was in a different lane, right? I don't see anything wrong going on except him cutting the motorcycle off awfully close (if you were to be 'racing' and decided to accelerate, who knows what'd happen)
