If you're referring to the front sprocket cover, that "grease" is actually chain lube that has been flung off the chain. It's normal and yes it's nasty.

Just an FYI for anyone else who has swapped bars... I noticed that my bike (2005 model) is prone to a little headshake when at top-end speed with the FZ1 bars. At normal, moderate and fast they are rock solid.

If the kill switch next to the throttle is bad, it will also cause the symptoms you described. It happened to me with the exact same symptoms... immediately thought it was bad fuel. Later replaced the switch and problem solved.
I'd recommend jiggling the switch when the bike is not starting...
I've also got over 10k miles on the Purolator car filters without problem.
