tl; dr: It is easy to polish when headers are hot.
This is from my experience, I recently discovered. I turned on the engine for few mins, and then used that one side sponge and the other side green mesh kind of dish washer scrub, and took mother's mag alum polish(Scott suggested me few months ago) and the dirt came out much faster than when the headers are cold.
Make sure you don't burn yourself, and I used a microfiber cloth and put one around one of the pipe and churned * for 5mins to see some good results.

I personally stopped cleaning my headers unless I'm going to a place I get a picture like devil's whip is something like that, as I use my bike daily(only vehicle) and it is lot of effort, that can be easily spoiled within 2-3 days.
