Music has a unique energy and it's not always as people might identify it.
The brain is one part of interpreting it. Then there are other interpretations.
As we grow our understanding of what we see and hear can change as we grow.

I heard this recording of an old song called 'Blueberry Hill" written by Fats Domino. I had heard that song a played a million times through out my life. I never really liked the song! On day I heard it done by a Canadian artist Bruce C0ckburn. It was like I had heard it for the first time and it was totally different. It seemed the artists who re-recorded it sat and and absorbed what the original spirit of what that song was about. To me the original recording had lost something maybe in all the corporate humdrum. I was hearing this song and feeling it for the first time.
The CD is called "Breakfast in New Orleans, Dinner in Timbuktu"

And you are right, The personal taste of music does change when getting older.
I went from commercial cr*p-music that's made by one press of a mousseclick, to real man made, live played music.
When I was young I had no idea what musicmaking was all about, so everything with a catchy tune was a "good" song. Now I know better.
More and more I learned to appreciate the golden decades for rock musicmaking, the '60, '70
Pioneer artists like the doors, simon & garfunkle, chris rea, ccr...
In those days the singers really could sing so the hair on the back comes up.

My personal favorite at this moment is Barry McGuire - eve of destruction

His voice gives me goosebumbs.

I was born in the late 80's, so I grew up with '90-eurodance. I still think it's very good music, but from a whole other level then '60 music.
In those days the music was really invented, now it's more like:
Play a 5 second melody, copy X70, play 3 note bass, copy X150 + auto-enhance + find a crappy singer and autotune the voice untill it sounds like a robot.

And than people are wondering why most songs (singing+instruments) are playbacked at a "live" performance. with all these modern computer techniques it's just impossible to play it live. Unless they have 4 macbook pro's connected...

But to each his own. Like you said, everybody has a different way of interpreting music, and listening to it.
