The Dynojet site lists the Zero map as well as "completely stock bike" maps for various models. I haven't installed the software on my old windows PC yet to see what the differences are. I also haven't installed my PC, pipes, or decat yet. I will be doing some experimentation in the near future, I'll post results.
Throttle twitchiness does get better with time. I don't notice it anymore. I did install a G2 throttle tamer though, so the combination of that and practice has resolved the problem for me. The throttle tamer gives a logarithmic cable pull pull rather than linear, resulting in a more gradual initial throttle opening (my description of how I believe it to work, I could be off).
