best way to drain our gas tank then remove it?

Not that I have seen.
Keep the overflow tubes in a jug/bucket/pan/etc and disconnect everything and pull it off quickly.
Or ride it........ once the fuel level is below the pump it wont run out even if you open it up. (assuming it is in a vertical position)

A tiny dribble will come out when you pull the line. Other than that, nothing comes out unless it's completely full.

The fuel pump is there to stop that from happening

You'll get a few drops of fuel, but a rag will take care of that...

I'd imagine you wouldn't try to do this on a full tank... but if you do, watch for the overflow...

I was under the impression from BD43's Dual Headlight Mod2 thread that if you were to remove the tank, you needed to drain it to no more than half. I've done this twice now. Once with a turkey baster, and it took about an hour and a half, one teaspon at a time, and I probably killed half my brain cells inhaling gas fumes. The second time, I bought a handheld gas siphon for $5 at an auto parts store and it took 5 minutes. I recommend the latter approach.

hold on, if you just wanted to update a wiring harness... why not ride it full out for another 150kms?

My best advice for this and ALL service operations is to be sure to have a few cold ones on ice or in the refrigerator.

Tilt the tank back, un hook both wire harnesses from the fuel pump, undo gas line fitting (and yes, just a dribble will come out-even with a full tank). Remove the vent lines from the tank, unbolt the tank the rest of the way and set on the floor. The lower the fuel level, the lighter/easier it'll be...

Or just use a kerosene siphon into a 5 gallon gas can on the seat. Either way works but the brass one looks cooler.

Or just dont worry about it and pick it up and sit it on a milk crate with a piece of wood to keep the pump from hitting.
