None of those mods sound like they would warrant a higher octane fuel. If the timing was advanced or compression was raised, I would run higher octane. You'll be fine with 87. If you happen to find the engine pings or knocks, you can always use higher octane fuel.

I've tried the stock screen, Puig double bubble, and a cut down stock screen. I prefer the cut down stock screen as it allows for less buffeting. I'm only 5'11" I can imagine this effect would be even more pronounced if I were taller.

You mean just springs? If so, no, it won't be just as good. The R6 forks have better damping with adjustable preload, compression, and rebound as well which help fine tune things.
