New tires on...and what a change! I didn't realize how squared off the old ones were...very glad that I changed them out.

My bike has about 8,000 on her and still has the original tires. The middle has about 1/16" tread left but the edges are basically brand new.
My question is, I am doing my 1st track day in a month or so and was wondering if I should use up my old tires on the track or put on a set of Dunlop...
Looking to get into a lower cost 2-piece track suit and was hoping to get some opinions. I really like the AGV Palomar, but it is not perforated leather and I am wondering if I will regret that.
Does anyone have this set-up?
Any recommendations?

I wasn't to worried about the 1st part because she lives inside during the winter and I am baby when it comes to riding in the cold :)
for the 2nd "no", lets say I was doing a track day, then another one two weeks later. Lets say that I would ride 50...
I will be doing my 1st track day with my fz6 and the track requires water only in the radiator. My question is, can I just run water all of the time, or do I need to switch back and forth between water and anti-freeze?
I asked about Water Wetter, and they said no, water only.
