I could rattle off some of my favorite places to ride through around the state but is there a specific area you're trying to stick to? Since you're headed to Nova Scotia I'm guessing you want the direct but pretty? You're best bet once you hit Maine is to hop off of I95 onto 295 after Portland and from there onto Route 1. That's the "scenic coastal" road that goes all the way up the state. There's a lot of a small coastal towns but its a beautiful ride.
